
Today's Topic: Post a Recipe You Love
This is my favorite recipe for Artichoke Dip! It was given to me by my awesome neighbor who has since moved. She always served it at our neighborhood BBQs, and now I keep the tradition alive. You will be sure to find this at every holiday gathering and birthday party! It's delicious! Thanks Jen!
Hot Artichoke Dip
Ingredients1 c. mayo
1 6 oz package feta cheese
2 oz pimentos
1 14 oz can of artichokes in water, finely chopped
1/2 c parmesan cheese
1 T minced garlic
Mix all the ingredients in a pan, I like to use the tin foil ones you can toss. Get one that comes with a lid in case you want to make it ahead of time or if there is leftovers (unlikely).
Bake at 350 degrees for 35 minutes (without the lid, if you got one). You can make this ahead of time and keep it in the fridge, in that case bake for 40-45 minutes.
I love to eat mine with wheat thins, but I know some people also like it with tortilla chips.
Or you could just use a spoon. That works too ;)

I've made hot artichoke dip, but this is a different recipe. We love feta cheese, so will have to try.
