Lunch - Baked Southwest Style Quesadillas

I got this idea from Beth on her Cooking and Crafting YouTube channel. Check her out, she has some great stuff and her commentary is pretty amusing :) 


I was already in the mood for quesadillas because my neighbor had been talking about them, so when I saw this in my inbox I knew it was a done deal. 


I went to the store today and picked up the goods. I wanted to make it "healthier" so I grabbed some whole wheat tortillas (I know, I try). 


I also used the frozen chicken breast strips. My friend uses these in her salads and I just love them. 


Here goes. 

Preheat the oven to 350 degrees.


First I tossed the chicken around in a pan with some basil and garlic powder and olive oil. 


Next, mix the chicken in a bowl with a can of chopped green chilis and some Pico de Gallo. The colorful kind with peppers and corn tastes really great in this!




Line a pan with foil and spray it with oil, I really like the olive oil spray, it comes in really handy. Place 2 tortillas on the pan and spray both sides with your choice of oil. Then grate some cheese and spread it around the tortillas. I used colby jack and cheddar since it was what I had on hand. 




Spoon half of the chicken mixture onto each cheesy tortilla and spread it out a little. 




Pop 'em in the oven and bake for five minutes


After 5 minutes is up, pull them out and carefully fold over the tortillas, then bake for another 5 minutes. 





Enjoy! I ate mine hot off the pan ;)
